  1. Heat a pan over low-medium heat. Add olive oil.
  2. Once hot, add the cumin seeds. As soon as they start popping, add grated ginger, garlic, and curry leaves. 
  3. Stir and saute for 30 seconds.
  4. Add chopped onion and saute until golden.
  5. Add the chopped tomatoes, turmeric powder, coriander powder, roasted cumin powder, and salt.
  6. Stir well and cover the lid. Cook for 2 minutes over low heat.
  7. Next add chopped carrots, bell peppers, green beans, sweet corn, and peas. Stir and mix.
  8. Cover the lid and cook for 3 minutes over low-medium heat.
  9. Add rolled oats and mix. Pour water. 
  10. Cover the lid and cook for 5 minutes over low heat. Your curried masala oat is ready!
