Ingredients
For approximately 4 people:


25 grams of lentils from a can or glass jar. Rinse the lentils well before using them in this recipe. When buying the can, make sure that the drained weight is 250 grams. The actual weight with moisture will therefore be higher (around 400 grams).
75 grams of cashew nuts
75 grams of pecans
75 grams of oatmeal
60 grams of flour
2 tbsp olive oil
1 onion, finely chopped
4 cloves of garlic, finely cut
2 carrots, peeled and cut into small pieces
1 bowl of mushrooms, cut into pieces
Salt and pepper
1 tbsp of thyme
80 ml of water
1 sheet of puff pastry
Small bowl of vegetable milk

For the vegan “meat jus”
2 tbsp olive oil
1 onion, finely chopped
3 cloves of garlic, finely cut
30 grams of flour
4 tbsp soy sauce
500 ml vegetable broth
Salt and pepper
1 tsp thyme

Preparation


When you have rinsed the lentils well, puree them with a hand blender. Set aside the lentil puree.

Finely chop the nuts. If necessary, use a kitchen robot to chop finer. Put the nuts in a dry pan and put it on a low heat. Roast the nuts for about 10 minutes and ensure that they do not burn.

Heat the olive oil in another pan and fry the onion and the garlic for about 2 minutes. Add the mushrooms and carrots and fry for 5 minutes. Add the tablespoon of thyme and season with salt and pepper.

Bake for a few minutes and then scrape out the pan. Put everything in a blender or kitchen robot and add the lentil puree and the baked nuts. Grind everything for about a minute. Do not puree it completely. There may be pieces left in the dough.

Put the dough in a bowl and add the flour and oatmeal. Mix everything well with a wooden spoon or use your hands. Add the water little by little. The idea is that you can knead the dough well. If you need more water, add more. If you need less water than 80 ml, this won’t hurt either.

Put some flour on a clean cutting board or work surface and make a rectangular shape from your dough.

Roll out the puff pastry and place the dough in the middle. You can just fold the dough neatly, or you can put the roast in a nice “puff pastry jacket” as in the video.

Coat the puff pastry with some vegetable milk and bake the roast at 200 ° C for 25 to 30 minutes. Make sure it does not burn.

You can make the sauce while the roast is in the oven. Heat a pan over low heat and add the olive oil.

Add the onion and garlic and fry for three minutes. Then add the soy sauce and mix well.

Now gradually add the flour to the pan and keep stirring well. Make sure that the flour does not burn or clump.

Once the flour is in the pan, add the vegetable stock. Mix everything well again.

Turn up the heat a little so that the sauce starts to simmer. Keep stirring while the sauce thickens.

Season with salt, pepper and thyme and your vegan “meat jus” is ready.
