INGREDIENTS (2 portions):

Soba noodles ingredients:

  • Soba noodles
  • 1 stock cube

Tomato sauce ingredients:

  • 3-4 chopped tomatoes
  • A few sun-dried tomatoes
  • A small handful of basil
  • 1/2 tsp salt
  • 1/3 – 1/2 tsp garlic powder
  • Black pepper to taste

Other ingredients:

  • Sunflower seeds, pine nuts or your choice of seeds or nuts

METHOD:

Boil water and add the soba noodles and 1 stock cube.

Cook for 5 minutes or according to packaging instructions.

In the meantime chop up 3-4 large tomatoes.

Add them to a blender together with all other tomato sauce ingredients and blend. There is actually no need to cook the tomato sauce, it tastes great as it. This is the amazing thing about this dish, it requires barely any time!

Drain the noodles and either pour the tomato sauce over the warm noodles or warm up the sauce first.

Sprinkle either sunflower seeds, pine nuts or your choice of nuts or seeds on top. Enjoy.
