Vegan Twist on Lasagna is Surprising and Amazing

A spicy variation on a perennial favorite, this vegan twist on lasagna is a tantalizing revision that provides a new perspective for your taste buds.

  1. Boil lasagna noodles for 10 minutes, drain then set aside submerged in warm water (to prevent sticking).

  2. Dice garlic and onion, saute in canola oil then add mushrooms and spinach. Saute until spinach has reduced down.

  1. Saute Beyond Beef between medium and high heat until lightly browned and crumbly.

  2. In a bowl, mix the jars of marinara and arrabbiata sauce with the crumbly Beyond Beef.

  3. Coat the bottom of the pan with a light coating of the sauce mixture.

  4. Lay down 3 lasagna noodles side by side.

  5. Put down half of the sauteed vegetables.

  6. Put down about 1/3 of the sauce mixture.

  7. Put down half of the Kite Hill ricotta in dollops.

  8. Put down a second layer of 3 lasagna noodles.

  9. Put down another 1/3 of the sauce mixture.

  10. Put down the remaining sauteed vegetables.

  11. Put down the remaining ricotta dollops.

  12. Put down final layer of 3 noodles.

  13. Put down the remaining sauce mixture and add Violife shaved parmesan or Violife grated parmesan vegan substitutes.

  14. Bake covered with aluminum foil in a pre-heated oven at 375 oF (191 oC) for 30 minutes.

  15. Take off the aluminum foil and bake for an additional 30 minutes.

Beyond Beef ingredients: pea protein, expeller-pressed canola oil, refined coconut oil, rice protein, natural flavors, dried yeast, cocoa butter, methylcellulose, contains 1% or less of potato starch, salt, potassium chloride, beet powder color, apple extract, pomegranate concentrate, sunflower lecithin, vinegar, lemon juice concentrate, vitamins and minerals (zinc sulfate, niacinamide (vitamin B3), pyridoxine hydrochloride (vitamin B6), cyanocobalamin (vitamin B12), calcium pantothenate.
